Ingredients
80 g (4 strips) bacon, diced
150 g (1 large) onion, finely chopped
2 cloves garlic, minced
150 g (1 medium) apple, finely diced
25 g (2 tbsp) brown sugar
7 g (1 tsp) honey
30 g (1 single shot) espresso (preferably Robusta or strong coffee)
60 g (1/4 cup) apple cider vinegar
30 ml + 30 ml whiskey (first addition for reduction, second added at the end)
1 g (½ tsp) black pepper
1 g (½ tsp) smoked paprika
a tiny pinch salt (bacon already contains salt)
Directions
- Cook the bacon slowly over medium heat until it becomes crisp and releases its fat. Remove it and leave a little fat in the pan.
- Add the chopped onions and garlic to the same pan and cook them down until they are golden.
- Add the apples, sugar, honey, salt, pepper and smoked paprika. Cook till the apples soften.
- Deglaze with apple cider vinegar and add espresso and whiskey, then stir everything together until it forms a sticky, bubbling mixture.
- Let the jam simmer gently until it thickens into a rich, spoonable consistency and the flavours meld beautifully.
- Return the crisp bacon to the mixture and add the remaining whisky, stir well, and cook for a few more minutes.
- Remove from heat and let it cool completely before storing.
