200g cherry tomatoes (about 24)
120g mozzarella cheese balls (12 mini balls)
50g fresh basil leaves (about 24 leaves)
2 tbsp extra virgin olive oil
1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp freshly cracked black pepper
1 tsp balsamic vinegar
12 bamboo skewers or toothpicks
Directions
- Slice the cherry tomatoes in half or keep them whole, if you like. If your mozzarella balls are large, cut them in half too. Wash and pat dry the basil leaves.
- On each skewer, thread one basil leaf, one mozzarella ball, and one half or of a cherry tomato pr full (cut-side facing the mozzarella). Repeat the order if you like a fuller skewer, or leave them single-layered for cleaner bites.
- In a small bowl, whisk together olive oil, Italian seasoning, salt, pepper, and balsamic vinegar.
- Arrange the skewers on a platter and drizzle the dressing over them just before serving. Garnish with a few extra basil leaves for that elegant touch.
