Tart, flavourful and oh so sweet, this Cherry Chocolate Pudding is a real show stopper. Tart and sweet cherry with bitter rich chocolate in a pudding. OH MY!

Ingredients

  • 100 g Fresh Cherries

  • 100 g Chocolate Cake Crumbs / Crushed Oreo Biscuit crumbs

  • Chocolate Pudding
  • 240+120 ml Whole Milk

  • 2 tbsp Dutch Cocoa powder

  • 50 g Granulated Sugar

  • 50 g Semi Sweet Chocolate Chunks

  • 1 tbsp Cornflour

  • 1 tsp Brandy, optional

  • Homemade Cherry Preserve
  • 100 g Cherries, pitted

  • 20 g Granulated Sugar

  • 1 tsp Lemon Juice

Directions

  • Chocolate Pudding
  • In a saucepan add 240 ml of milk and bring it to a simmer. Now add cocoa powder and sugar. Give it a boil.
  • In a bowl add 120 ml of milk and mix cornflour in it. Make sure there are no cornflour lumps. Add to the milk and chocolate mixture. Simmer till the mixture thickens and you get the desired consistency,
  • Once the milk and chocolate mixture has gotten thick, transfer it to a bowl, cover it with plastic wrap and let it cool down completely. Set this aside.
  • Once set and cool add in a tsp of Brandy and mix well before adding the pudding to cups.
  • Homemade Cherry Preserve
  • In a heavy bottomed pan, add halved pitted cherries with sugar. Let the cherries cook till you see them mushy and the sugar becomes thick. Turn off the flame and add lemon juice.
  • Assembling
  • In a cup/dessert bowl, put a layer of cake crumbs / chocolate cookie crumbs. Top with homemade cherry preserve and place halved cherries on the sides.
  • Now add the chocolate pudding. Top with more crumbs and preserve.
  • Place a cherry on top!
  • Let the pudding chill in the refrigerator for at least an hour. Serve Chilled.
